Start by showing how store-bought lactase cleaves a lactose analog. Then show extreme product-inhibition by galactose. | This serves as a relevant starting point when you later discuss the Nobel experiments on the lactase genes. Selected students may continue with quantitative studies showing that the inhibition is "competitive."
