    TEACHER: Do this in place of lab #2 in the A.P.Biology syllabus.
    This is delightfully elegant, uses no toxins, quantitative, and is only about 20 minutes long.
    Start by showing how store-bought lactase cleaves a lactose analog. Then
show extreme product-inhibition by galactose.
    This serves as a relevant starting point when you later discuss the Nobel experiments on the lactase genes.
    Selected students may continue with quantitative studies showing that the inhibition is "competitive."
