Amylose is a straight-chain of α-(1 → 4)glucosan. One type of amylose is starch. Branched glusosans are amylopectin and glycogen. Here is a side view of water-soluble amylose:

Here is cellulose,which is a β-(1 → 4)glucosan. Notice that a mere isomeric change from α to β causes a great change is overall shape of the molecule and makes it water-insoluble:


Chitin is a derivative of cellulose. Each astericks in the cellulose figure has an N-acety group attached to the #2 carbon in the glucose's ring.
